Vanilla co-op rules

You use summon signs or pools to bring a player into your world.
A password helps you match with friends only.
The session ends when you die or when the area boss is defeated.
You cannot use Torrent in the open world in co-op.
You cannot enter dungeons with a summoned player.
You cannot summon into areas whose boss you already beat.
Invasions can only happen during an active co-op session.

Seamless Co-op

PC Gamer describes the fan-made mod as allowing up to five players without the fog-wall, zone or Torrent limits, and with no invaders. Enemies scale with the number of players, and deaths add "rot" until you rest at a bonfire. It supports the Shadow of the Erdtree DLC, uses a separate launcher and password, and keeps separate saves.

Nightreign

If you mostly want a co-op game, Elden Ring Nightreign is built for it. Steam lists single-player, multi-player, co-op and online co-op, with one to three players.
